The first three digits of the carrier code indicate the country of operation. The last two digits are the carrier's allocated "color" within that country. For example, in Australia, Vodafone is 505-03 (country 505, carrier color 3). In the UK, however, Vodafone is 234-15 (country 234, carrier color 15).

There are two main occasions when you might need to know a carrier code. The first is if you need to edit the roaming (preferred carrier) database on your SIM card. Not all phones allow you to do this (Motorola is the only brand I can immediately think of that offers the feature).

The second reason you might need to know a carrier code is because some unlock codes (e.g. SIM unblocking codes) are algorithmically generated from the code of the carrier that issued your phone. Various cracking programs exist to calculate these unlock codes if you type in (for example) the phone's IMEI and the issuing carrier code.
